Music - The Headliner
We almost didn't include Music because it was so intense, but then we thought about going big or going home. This Canadian powerhouse is why people drive to our farm stand. One customer uses a single clove for her 12-person pasta sauce. Another customer's kid won't eat it. Both are correct. When raw, it'll clear your sinuses. Roasted? It becomes this deep, complex, almost wine-like thing that makes people close their eyes when they taste it.
Real talk: If you want garlic to whisper, skip Music. If you want it to sing opera, this is your bulb.
Sicilian Artichoke - The Diplomat
My grandmother would have loved this one. It's the garlic that plays well with others - never overpowers, always enhances. We've converted so many "I don't like garlic" people to Sicilian that we should get a commission from Big Garlic (if that was a thing). With all those cloves arranged in perfect layers, it's also stupidly easy to peel. One customer braids 50 pounds of these every year and gives them as Christmas gifts.

Chesnok Red - The Artist
Honestly, Chesnok is why we became garlic farmers. First time we roasted it, we ate the entire bulb with a spoon. It gets creamy and sweet like - I know this sounds insane - garlic pudding. The purple stripes aren't just pretty (though they are Instagram gold). They're a sign that this garlic has been around since before your great-great-grandparents were born. From the Republic of Georgia originally, which explains why it's so good at parties.

Inchelium Red - The Native
This one has the best story. I discovered on the Colville Reservation in Washington that it's been growing in North America longer than any of us have been here. It starts out all mild and friendly, then halfway through chewing you get this warmth that builds. Not hot like Music, but warm like a hug. Won a bunch of taste tests in the 90s but doesn't brag about it. We respect that.
Real talk: The Swiss Army knife of garlic. Good at everything, master of quite a few things.
